“Japanese chefs are very serious about the quality of ingredients,” remarked Chan, who has previously lived in Japan and fully understands the Japanese culinary culture, “and we are very serious about what we serve to our customers too. So we have jet-fresh seasonal seafood from Japan and fresh oysters from around the world coming in every day,” she continued. For something as simple as udon, the restaurant insists on using only Inaniwa Udon, the premium Japanese noodle. When premium ingredients meet culinary creativity, you can really taste the difference.
Sosaku Ryori — the Creative Reinvention
A dollop of whisked egg white on the rib eye steak, udon served in shooter glasses, etc., food served in Deluxe Wine are all attractive to the eye and delectable to the palate — thanks to Master Chef Lai, who specialises in sosaku ryori, or creative cooking. “By adding a touch of creativity in the cooking process, you can create a novel dish without compromising the flavours of the ingredients,” explains Lai.

Complimenting the menu is an eclectic selection of wine. From exquisite red and white wine, Japanese sake, Korean jinro, Chinese wuliangye, to gourmet liqueurs such as tomato liqueur and sweet potato spirit — you name it, they’ve got it. Chan enthuses, “our wine selection is offered to enhance customers’ dining experience.”
She even makes the effort to patrol the aisle and sends patrons a new glass of wine whenever the ice starts to melt away.
