“Japanese chefs are very serious about the quality of ingredients,” remarked Chan, who has previously lived in Japan and fully understands the Japanese culinary culture, “and we are very serious about what we serve to our customers too. So we have jet-fresh seasonal seafood from Japan and fresh oysters from around the world coming in every day,” she continued. For something as simple as udon, the restaurant insists on using only Inaniwa Udon, the premium Japanese noodle. She even makes the effort to patrol the aisle and sends patrons a new glass of wine whenever the ice starts to melt away.
